You will never use a mix for pancakes if you try these! They make a great dinner.

Recipe Ingredients for Buttermilk Pancakes

2 cups buttermilk
2 large eggs
1/4 cup canola oil
1/4 cup sugar
2 cups flour
2 teaspoons baking soda
1/4 teaspoon salt

Recipe Directions for Buttermilk Pancakes

  1. Sift the sugar, flour, baking soda and salt together in a large bowl.

  2. Use a wire whisk to blend the eggs, oil, and buttermilk.

  3. Pour the liquid ingredients into the center of the dry ingredients, and stir until the mix is still lumpy, but blended. Do not over beat this, just stir until mixed.

  4. Drop onto a pre-heated griddle, and cook on medium heat, turning after one side forms bubbles.

  5. These pancakes will be fluffy and thick, so make sure that they only get turned one time!
