Recipe Ingredients for Buttermilk Pancakes

2 cups unbleached all purpose flour
2 tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 cups buttermilk
1 large egg
3 tablespoons unsalted butter, melted and cooled

Recipe Directions for Buttermilk Pancakes

  1. Blend well all dry ingredients in a large bowl; set aside.

  2. Blend well all wet ingredients in a bowl or measuring cup.

  3. Make a well in the dry ingredients and pour wet ingredients into the well. Mix gently with a spoon or whisk until completely incorporated, but be careful not to over-mix; small lumps may remain.

  4. Heat griddle (350-degrees) or skillet (over medium high heat). Spray with non-stick spray if desired.

  5. Portion pancakes with a 1/3 cup scoop, but don't worry about scraping the measure. Makes about 12 medium pancakes (3 inch diameter).
