Yummy healthy high fiber buttermilk pancakes

Recipe Ingredients for Buttermilk Pancakes with Flax seed

2 cups buttermilk
2 egg whites
1/4 cup canola oil
1 cup flour
1/2 cup ground flax seed
1/4 cup sugar
1 pinch of salt
1 tsp baking soda
1 heaping tsp baking powder
1 cup chopped blueberries

Recipe Directions for Buttermilk Pancakes with Flax seed

  1. Mix the first three liquid ingredients in a large bowl.

  2. Mix the dry ingredients in another bowl.

  3. Stir or wisk dry ingredients into bowl with liquid ingredients.

  4. Mix in blueberries.

  5. Pour 1/4 cups of batter onto preheated griddle (I set my electric griddle to 400 degrees).

  6. This pancake batter is a bit thin, you can make it thicker if you reduce the amount of buttermilk.
