"Buttermilk" Oven Fried Chicken Recipe

This is an adjustment to a previously posted recipe. I've replaced the white flour with Cornflakes and whole wheat flour. I dumped the milk in favor of Kefir. Kefir is a great substitute for buttermilk.

Recipe Ingredients for "Buttermilk" Oven Fried Chicken

12 ounces chicken breast, cut in strips
1/4 cup AllWhites
1/4 cup Kefir, low fat
1 cup Cornflakes, crushed
1/2 cups Wheat Flour, White, All-purpose, Enriched, Bleached
1/2 tsp. Pepper, Black
1/2 tsp. Garlic Powder
1 tsp. Leavening Agents, Baking Powder, Low-sodium

Recipe Directions for "Buttermilk" Oven Fried Chicken

  1. Preheat oven to 425 degrees F.

  2. Cut chicken breasts into strips.

  3. Mix egg whites and Kefir in a bowl. Stir in the whole wheat flour, baking powder, and seasonings.

  4. Crush cornflakes finely in large ziplock bag.

  5. Dip the chicken into the batter.

  6. Coat in corn flakes.

  7. Repeat until all strips are coated.

  8. Spray cookie or sheet pan with Canola oil spray (or line with parchment paper). Lay chicken strips in pan. Spray with canola or olive oil spray.

  9. Bake in preheated oven (425F) for 20 - 25 minutes or until no longer pink inside.

  10. NOTE: Larger strips may take up to 35 mins.

  11. Common errors:

  12. Do not put pan in oven until it is heated up. :)

  13. Stay away from frozen chicken strips, they have too much salt.
