tenderizing marinated chicken breast ( 1 large breast serves 2 meals)

Recipe Ingredients for Buttermilk and Lemon Chicken

2 tablespoons low fat buttermilk
1/4 cup lemon, juiced
1 teaspoon lemon zest
8 ounces boneless skinless chicken breast
1/2 teaspoon pepper
1/2 teaspoon garlic
1/8 teaspoon nutmeg

Recipe Directions for Buttermilk and Lemon Chicken

  1. Season Chicken in a large resealable bag with pepper, nutmeg and garlic. Add lemon zest then squeeze the juice of the same lemon in to the bag, add the buttermilk (use more if necessary to coat, about a 1/4 cup)

  2. Marinate in the refrigerator for 4 hours- or over night

  3. Preheat broiler. Coat broiler rack with nonstick cooking spray.

  4. Broil chicken breasts 5-6 minutes per side, or until a thermometer reads 165 degrees.

  5. Serve with Roasted Sweet Potaoes, String Beans, and Brown Rice.
