Recipe Ingredients for Buttermilk Dumplings with Blueberry Sauce

3 cups blueberries
1/4 cup water
3 tbsp sugar
1 1/2 tbsp Lemon juice
2 tsp lemon zest
1 1/2 tsp cornstarch
1 tbsp water
1 cup all purpose flour
2 tbsp sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 tbsp unsalted butter, melted
1/2 cup lowfat buttermilk
2 tbsp sugar
1 tsp cinnamon

Recipe Directions for Buttermilk Dumplings with Blueberry Sauce

  1. For the sauce: in a medium saucepan, combine the berries, water and sugar. Bring to a boil and cook for about 10-15 minutes, until most of the berries have popped.

  2. Stir in lemon juice and zest.

  3. Combine cornstarch with 1 Tbsp of water, then add to hot blueberry sauce; cook for 1-2 minutes, until sauce thickens slightly.

  4. Turn heat to a low simmer and cover.

  5. Dumplings:

  6. In a mixing bowl, stir together the flour, sugar, baking powder, baking soda and salt.

  7. Stir in melted butter. Add enough of the buttermilk to form a soft, sticky dough that is slightly wetter than a biscuit dough.

  8. Using a soup spoon, spoon the dough over the fruit , forming small dumplings. Sprinkle the dumplings with cinnamon sugar mixture. Tightly cover, and steam mixture over a medium-low heat, without opening the lid for a minimum of 20 mintues--DON'T LIFT THE COVER!!

  9. Dumplings are done when the surface is dry when touched.

  10. Serve by spooning a dumpling into a bowl and covering with sauce. If desired, you can top with vanilla yogurt, whipped cream/topping, or go for broke and use vanilla ice cream!
