Tender and yummy! I use a stoneware jelly roll pan with no liner and it works great. Weighing flour: use 7 oz ww pastry flour if you like a more spread-out biscuit; 10 oz if you like a more "regular" biscuit. You can mix up the dough as directed the morning or night before you want to make the biscuits.

Recipe Ingredients for Buttermilk Drop Biscuits

10 oz (2c) whole wheat pastry flour
2 1/2 t baking powder
1/2 t baking soda
1/2 t salt
1 c cold buttermilk or kefir or thinned plain yogurt
3 T unsalted butter, melted and cooled slightly

Recipe Directions for Buttermilk Drop Biscuits

  1. Melt butter and cool slightly.

  2. Measure flour into a mixing bowl.

  3. Whisk together melted butter and cold buttermilk.

  4. Stir liquid into flour just until mixed. Cover dough with plastic wrap (eliminating air next to dough) and cover the bowl with a damp towel. Let stand at room temperature 12-24 hours.

  5. Sift leavenings and salt into small bowl and set aside.

  6. When time has passed, preheat oven to 450 degrees. Work leavenings and salt thoroughly into dough, but do not overwork. Drop spoonfuls of dough on lightly greased cookie sheet or stoneware jelly roll pan. Bake for 12-15 min. until tops are golden brown and crisp. Transfer to wire rack to cool.
