A quick and very tasty cornbread!

Recipe Ingredients for Buttermilk Cornbread

1 stick Butter
85 grams Pure Cane Sugar
2 large Egg, Whole
1 cup Lowfat Buttermilk
1 cup Cornmeal, Whole-grain, Yellow
2 serving Food You Feel Good About Flour
2 serving Food You Feel Good About All Purpose Flour
0.5 tsp Salt, Table
0.5 tsp Baking Soda

Recipe Directions for Buttermilk Cornbread

  1. Preheat oven to 375F.

  2. Melt the butter. Place sugar in a bowl. Once the butter is melted, remove from the heat and pour over the sugar.

  3. Use a whisk to combine the butter and sugar.

  4. Very quickly, add both of the eggs and beat until well blended.

  5. Mix the buttermilk and the baking soda together slightly. Add this to the mixture and stir together.

  6. Add the cornmeal and stir until smooth. Add the salt and flour and stir until smooth. The mixture should be thick and smooth, no lumps.

  7. Place mini-cupcake cups inside mini-cupcake trays.

  8. Place some of the mixture into each cup.

  9. Bake for 10-15minutes or until a toothpick comes clean.

  10. Enjoy!
