This is a moist cornbread with buttermilk and corn added.

Recipe Ingredients for Buttermilk Cornbread

1/4 cup Sugars, Granulated
1 cup Yellow Corn Meal
1 cup Enriched Unbleached White Flour
2 teaspoon Baking Powder
1/2 tsp Salt, Table
1 cup Milk, Buttermilk, Fluid, Cultured, Lowfat
1 large egg Eggland's Best Egg
4 tbsp extra virgin olive oil
1 cup Corn, Sweet, Yellow

Recipe Directions for Buttermilk Cornbread

  1. Preheat oven to 400 degrees. Grease a 13X9 inch pan or 12 muffin cups - standard size.

  2. Measure dry ingredients into a large bowl.

  3. Melt butter, combine butter with buttermilk and beaten eggs.

  4. Add the milk mixture to the dry ingredients, mixing just until blended. Add in the corn kernels

  5. Either pour the cornbread into the sheet pan, or place in muffin cups. Bake until outside is just starting to brown and the center springs back when touched.
