Recipe Ingredients for "Buttermilk" Cornbread

1 1/2 cup flour
1 1/2 cup cornmeal
3 tbsp sugar
1 tbsp baking powder
1/4 tsp baking soda
1 1/2 tsp salt
2 cups rice milk
2 tbsp apple cider vinegar
3 tbsp oil

Recipe Directions for "Buttermilk" Cornbread

  1. Preheat oven to 425 F. Lightly oil an 8x8 inch baking pan and set aside.

  2. In a large bowl, stir together flour, cornmeal, sugar, baking powder, baking soda, and salt. Stir the "milk," vinegar, and oil until just mixed.

  3. Pour evenly into baking pan and bake for 25-30 minutes or until a toothpick or knife comes out clean. Let cool on rack for 10-15 minutes before removing from pan. Makes 1 square loaf.
