Healthy, easy corn muffins. Buttermilk makes them light, and the applesauce keeps them moist.

Recipe Ingredients for Buttermilk Corn Muffins

1 cup corn meal
1 cup flour
1/4 cup sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 cup olive oil
1/2 cup unsweetened applesauce
1 cup low fat buttermilk
1 egg

Recipe Directions for Buttermilk Corn Muffins

  1. Stir corn meal, flour, sugan, baking powder, baking soda, and salt together in a bowl.

  2. Pour applesauce and olive oil in another bowl and beat with a fork to mix them. Beat in the egg. Whisk in the buttermilk.

  3. Add the wet ingredients to the dry ingredients and mix gently until the flour is incorporated, but do not over beat. Just stir until mixed.

  4. To make 6 large muffins, pour into 6 grease large muffin cup pan.

  5. Bake at 400 degrees for about 15 minutes, or until lightly golden brown.
