Recipe Ingredients for Buttermilk-Cinnamon Coffee Cake (doubled)

4 1/2 cups white flour
1 teaspoon salt
4 teaspoons cinnamon
1/2 teaspoon powdered ginger
1 cup brown sugar, lightly packed
1 cup white sugar
1 cup canola oil
2 teaspoons baking soda
2 teaspoons baking powder
2 large eggs, beaten
2 cups low-fat buttermilk

Recipe Directions for Buttermilk-Cinnamon Coffee Cake (doubled)

  1. In a large bowl, mix together the flour, salt, half of the cinnamon, ginger, both sugars and canola oil. Remove 1 1/2 cups of this mixture and add the remaining cinnamon to it. Mix well and set aside to use as a topping.

  2. To the remaining batter, add the baking soda, baking powder, egg and buttermilk. Mix to combine all ingredients; small lumps in the batter are okay.

  3. Pour the batter into a moderately greased or sprayed 9"x13"x2" pan. Sprinkle the topping mixture evenly over the surface. Bake at 350F for 40 to 45 minutes.
