Buttermilk/buckwheat pancakes - Gluten-free Makes 8 pancakes - 4 per serving

Recipe Ingredients for Buttermilk/buckwheat pancakes - Gluten-free

1/2 cup buckwheat flour, light
1/2 tsp baking powder
1/8 tsp baking soda
1/8 tsp kosher salt
1/2 cup buttermilk
1/4 cup milk , fat-free
1 egg white
1 tbsp butter

Recipe Directions for Buttermilk/buckwheat pancakes - Gluten-free

  1. Mix together the dry ingredients. Then, in a separate bowl, mix together the buttermilk and egg white. Pour the wet ingredients into the dry ingredients until the dry ingredients are almost incorporated. If needed, add the fat-free milk to thin.

  2. Lightly spray oil the griddle and heat. Pour batter onto griddle and cook until bubbles form and the edges dry, then flip. Serve with butter (and syrup if you choose).
