Recipe Ingredients for Buttermilk Bran Muffins

2 cups buttermilk
1 1/2 cups bran cereal
2 eggs
1/3 cup Melted Butter
1 tsp vanilla
1 cup brown sugar
1/4 tsp lemon rind
2 cups whole wheat flour
1/2 cup all purpose flour
1/2 tsp baking soda
1/4 tsp salt
2 tsp baking powder
1 tsp cinnamon

Recipe Directions for Buttermilk Bran Muffins

  1. Preheat oven to 400 F.

  2. Combine buttermilk with bran and set aside.

  3. Mix together eggs, butter and vanilla.

  4. Stir into buttermilk.

  5. Stir sugar and lemon into remaining dry ingredients.

  6. Add buttermilk mixture and stir just until blended.

  7. Fill greased mufffin tins 3/4 full.

  8. Bake 20-25 minutes. Makes 12 muffins.
