Healthy Bran Muffins (Gluten Free)

Recipe Ingredients for Buttermilk Bran Muffins

1/2 cup oat bran
1/2 cup wheat bran
1/4 cup brown sugar
4 tablespoons sunflower oil
1 1/2 cups rice flour
7 grams (1 tsp) xantham gum
1 1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup flax seed, ground
2 eggs
1 cup buttermilk

Recipe Directions for Buttermilk Bran Muffins

  1. In one bowl, mix together oat bran, wheat bran, sugar and oil. Let sit.

  2. In another bowl mix together flour, gum, baking soda, salt and flax seed. Let sit.

  3. In another bowl beat together eggs and buttermilk.

  4. Add wet ingredients to dry and mix until moist.

  5. Oil muffins pans, fill with batter, and bake at 350 for 20 minutes.
