From "The Frugal Gourmet Cooks American" by Jeff Smith. I make 2 dozen of the large muffins (thus 24 servings). Makes 4 dozen regular size muffins.

Recipe Ingredients for Buttermilk Bran Muffins

5 t baking soda
1 cup butter
2 cups sugar
4 eggs
4 cups All Bran cereal
2 cups bran flakes
5 cups flour
1 quart lowfat buttermilk

Recipe Directions for Buttermilk Bran Muffins

  1. Dissolve the baking soda in 2 cups boiling water. Set aside to cool.

  2. With electric mixer, cream butter and sugar.

  3. Beat in eggs.

  4. By hand, stir in remaining ingredients.

  5. Finally, stir in soda water.

  6. Scoop 1/2 cup batter into each large muffin tin (or 1/4 cup into regular muffin tin).

  7. Bake in muffin pans at 375 for 30 minutes.

  8. Keep the batter covered in the refrigerator for up to 6 weeks.
