These biscuits are lighter and airier than baking powder biscuits and come out of the oven puffed and golden brown. Buttermilk adds a distinctive flavor and helps make very tender dough. Recipe Ingredients for Buttermilk Biscuits (ADA)

1 cup all-purpose flour, plus
1 tablespoon all-purpose flour
1 tsp baking powder (18369)
1/2 tsp baking soda
1/4 tsp salt
1/4 cup vegetable shortening (4031) or margarine
1/3 cup lowfat buttermilk, plus
2 tablespoons of buttermilk

Recipe Directions for Buttermilk Biscuits (ADA)

  1. Preheat the oven to 425 degrees F. Prepare a cookie sheet with nonstick pan spray.

  2. Combine 1 cup of the flour, the baking powder, baking soda, and salt in a medium bowl. Cut in the shortening with a pastry blender until the mixture resembles coarse crumbs. Stir in the buttermilk to get a stiff dough.

  3. Roll or pat out the dough on a board floured with the remaining 1 tablespoon flour to 1/2-inch thickness. Cut 2-inch rounds and place the biscuits 1 inch apart on the prepared cookie sheet. Use all the dough, but do not roll it out more than twice or you'll toughen it.

  4. Bake for 8 to 10 minutes, or until puffed and golden. Serve hot or warm.
