Almost like warm rice pudding, but with oatmeal instead of rice. Single Serve and can be a make-ahead breakfast, just heat it up!

Recipe Ingredients for "Buttermilk Baked Oatmeal"

1/3 cup rolled oats
1/4 tsp granulated sugar
1/4 tsp brown sugar
1/4 tsp baking powder
1 pinch salt
1/2 cup unsweetened almond milk
1/4 tsp white vinegar
1 egg white
1/4 tsp pure vanilla extract
1/4 cup apple, chopped
7 grams walnuts, chopped
1 tbsp raisins
1 cinnamon to taste

Recipe Directions for "Buttermilk Baked Oatmeal"

  1. Preheat oven to 350F. Lightly grease a small ovenproof bowl.

  2. In a small mixing bowl, whisk together oats, sugar, baking powder, raisins, apples, walnuts, and salt.

  3. In a medium bowl, whisk together milk, egg white, and vanilla extract.

  4. Pour dry ingredients into wet and stir until combined. Spoon mixture into prepared bowl.

  5. Bake for 25-30 minutes, or until oatmeal is puffed and set.

  6. Serve warm with honey, maple syrup, bananas, butter, whatever you like! I like honey drizzled over the top with a couple dashes of cinnamon.
