Recipe Ingredients for Butter Squash and Roasted Baby Bella Mushrooms

8 oz baby bella mushrooms
1 small zucchini
2 small squash
2 tbsp unsalted butter
1 medium green bell pepper
4 tbsp extra virgin olive oil
1 cup sliced red onion
1/4 cup low sodium soy sauce
1/8 tsp oregano
1/8 tsp sea salt
1/8 tsp cumin
1/8 tsp black pepper
1/4 cup plain yogurt
1/4 cup organic skim milk

Recipe Directions for Butter Squash and Roasted Baby Bella Mushrooms

  1. Slice all mushrooms and place the flat ones in a small container with about 1-2 tbsp olive oil and spices.

  2. Shake container to coat well and then place on roasting sheet, bake at 350F for about 10-15 minutes.

  3. Slice half a red onion and put in skillet with remaining oil and the rounded sides of mushrooms with soy sauce and sautee.

  4. Slice green pepper and squash and place in another pan with the butter and melt. Cook for a little bit and then add the yogurt and milk and let it cook on medium a bit then turn it down and cover for a few more minutes.

  5. Can serve with rice to absorb the juices of all the foods.
