Recipe Ingredients for Butter Soft Zucchini and Tomatoes

1 oz ginger
3 tbsp almonds
1 1/2 tbs coriander seeds
1 tsp cumin seeds
1/4 tsp fennel seeds
1/4 cup water
3 tbsp butter
340 g tomato
685 g zucchini
1/2 tsp turmeric
1 tsp salt
3 tbsp basil

Recipe Directions for Butter Soft Zucchini and Tomatoes

  1. Puree in blender or food processor the ginger, almonds, coriander seeds, cumin seeds, fennel seeds and water until smooth.

  2. Heat butter in large heavy nonstick saucepan over moderate heat.

  3. Pour in spice puree and fry until it thickens and separates from the butter.

  4. Stir in tomatoes and cook for a few minutes.

  5. Add squash, turmeric, salt and half the basil.

  6. Cook until tender. Add water if necessary.

  7. Stir in last half of basil before serving.
