Butter Pecan Pie Recipe

This is my mom's creation. She also does this with Blueberry pie filling.

Recipe Ingredients for Butter Pecan Pie

3/4 cup pecans, chopped
2 tbls Smart Balance Butter
1/2 cup Smart Balance Butter,softened
1 cup pecans, chopped
1 cup all-purpose flour
1 oz cream cheese, softened
1/2 cup powdered sugar
1 cup light cool whip
6 oz instant vanilla pudding
3 cups 1% milk
1/2 cup toasted pecans
2 cups light cool whip
1/4 cup toasted pecans

Recipe Directions for Butter Pecan Pie

  1. Put first two ingrediens in a glass pie pan and toast pecans in the microwave on high for 4 to 6 minutes. Set aside.

  2. CRUST: Mix crust ingedients and press into a 9 x 13 pan. Bake at 350 degree for 30 minutes or until crust is light brown. Cool crust completely.

  3. LAYER #1: Mix layer #1 ingredients and spread over cooled crust.

  4. LAYER #2: Mix pudding mix with milk until thick, add 1/2 cup chopped toasted pecans. Spread over layer #1

  5. FINAL TOPPING: Spread the remainder of a 12 oz cool whip over pudding and sprinkle with the remaining 1/4 cup toasted pecans.
