Yummy - filling, very flavorful, and very healthy. You need a 12 oz can of chickpeas, but the calorie counter wouldn't bring up the cans. Also, yes coconut oil is a sat fat, but it has the benefit of killing systemic yeast on contact and helping kill carb cravings.

Recipe Ingredients for Butter Chickpea Curry

4 medium potatoes (cubed)
2 tablespoons coconut oil
1 medium yellow onion (diced)
1 teaspoon minced garlic
2 teaspoons curry powder
2 teaspoons garam masala
1 teaspoon fresh ginger
1 teaspoon cumin
1/2 teaspoon salt
2 tsp red curry paste
1 can condensed tomato soup
1/2 cup lite coconut milk
6 oz chickpeas (equal to 12 oz can- calories wont come up correct)
5 oz cauliflower

Recipe Directions for Butter Chickpea Curry

  1. Place potatoes in a saucepan, cover with water, and bring to a boil over high heat; simmer until the potatoes are tender. Drain, and set aside.

  2. Warm oil in a skillet over medium heat. Stir in onion and garlic, and cook until the onions are soft and translucent.

  3. Stir in curry powder, garam masala, ginger, cumin, and salt. Cook for 1 or 2 minutes, stirring.

  4. Pour in soup, coconut milk, chickpeas, and cauliflower. Stir in potatoes. Simmer 5 minutes.

  5. Serve about 1 cup of curry over 1 cup brown rice.
