This cake is a lower fat version of the standard butter cake. The original version has a plum topping, but I like it with sour cherries or canned peaches.

Recipe Ingredients for Butter Cake with Sour Cherry Topping

1/4 cup Butter
3/4 cup Sugars, Granulated
2 large Egg, Whole
1 1/4 cup Wheat Flour, White, All-purpose, Enriched, Unbleached
0.33 cup Milk, Nonfat, Fluid
10 oz Sour Cherry
1 tsp Baking Powder

Recipe Directions for Butter Cake with Sour Cherry Topping

  1. Grease 9 or 10 inch square cake pan or use greased springform pan.

  2. Note: I like to double the recipe and use a 9x13" pan. That allows me to use a 28 oz jar of pitted sour cherries in light syrup. Drain the cherries and discard the syrup. You can place all the cherries on top or you can mix most of them into the cake and save a few for on top. This adds a nice moistness and flavour to the cake.

  3. In a large bowl, cream together butter, sugar, and egg yolks until fluffy (and lighter in colour). Combine flour and baking powder; beat into egg mixture alternately with milk. Beat egg whites until stiff but not dry; fold into batter. Turn into prepared pan. Arrange fruit on top.

  4. Bake in 350F oven for 35 to 45 minutes or until top is golden and toothpick inserted into cake comes out clean.
