A take on Rose Elliot's Butter Bean and Tomato Soup.

Recipe Ingredients for Butter Bean and Tomato

1 1/5 cup Butter Beans
3 3/4 cup (8 fl oz) Water
300 grams Onions
1 tsp, crumbled Bay Leaf
400 grams Italian Chopped Tomatoes
1/2 tsp Sugars, Granulated
1 dash Pepper, Black
1 dash Salt, Table
1 cup Parsley
1 1tsp Olive Oil

Recipe Directions for Butter Bean and Tomato

  1. Soak, drain and rinse beans as usual. Put them into a large saucepan with the water or stock and the bay leaf and simmer until tender ? about 1 1/4 hours.

  2. Meanwhile, peel and slice the onions and fry them lightly in the olive oil until they are soft ? about 10 minutes ? then add them to the cooked beans, together with the tomatoes and some sea salt and freshly ground pepper.

  3. Bring them to a boil and simmer gently for about 10 minutes. Check seasoning, adding more solt and freshly ground black pepper and a little sugar if you think it needs them. Serve and sprinkle with parsley.
