800 grams Butter Beans
400 grams Tomatoes Diced
2 cup Leeks, (Bulb And Lower Leaf-portion)
1 serving Stock Cubes
4 serving Potatoes

Recipe Directions for Butter Bean & Tomato Casserole

  1. Sautee leeks in 1 tbs veg stock until soft

  2. Add remaining ingredients, stir and bring to boil. Simmer 10-15 mins until thickened.

  3. Accompany with new potatoes
