Recipe Ingredients for Butter Bean Soup with Turkey

1 tbsp olive oil
1 onion, chopped
3 cloves garlic, chopped
1/2 tsp thyme
3 cups chicken stock, low sodium
1 carrot, peeled and diced
3 cups lima beans, frozen
1/2 lb turkey breast, diced
1 tbsp green onion, chopped

Recipe Directions for Butter Bean Soup with Turkey

  1. In large saucepan, heat the olive oil over medium-high heat. Add the yellow onion and saute until soft, about 3 minutes. Add the garlic and thyme and cook for 1 minute; do not let the garlic brown. Add the broth and carrot and bring to a boil. Add the thawed beans and the turkey. Simmer uncovered stirring occasionally, until the beans ar heated through, about 5 minutes.

  2. Add water or additional broth, heated, if the soup is too thick. Ladle inot bowls, garnish with the green onion and serve
