Recipe Ingredients for Butter Bean (Lima Bean) Soup w/ Turkey

48 ounces, water (6 cups)
1 pounds, Lima Beans, Large, Dry
1 tbsp, Olive Oil
150 grams, Onion, Diced
3 cloves, Garlic, Fine Diced
100 grams, Carrots, finely diced
224 grams, Artichoke Hearts, canned
1 1/4 pounds, Ground Turkey, 7% fat

Recipe Directions for Butter Bean (Lima Bean) Soup w/ Turkey

  1. Soak beans overnight, or follow package directions for preparation. Add prepared beans to crock pot with 6 cups of water. Add finely diced carrots to pot. Set for 4 to 6 hour cook time.

  2. Saute onions and garlic in olive oil. Add ground turkey and saute until lightly browned. Add browned ingredients to crock pot.

  3. Puree artichoke hearts and add to pot. This helps thicken the soup stock and adds subtle flavors. Salt content of canned artichokes may be sufficient, but more salt can be added to suit your taste.

  4. Add other spices and condements and let simmer until done.
