Recipe Ingredients for Butter Almond Ice soy

2 cup silk soy milk
1/4 c canola oil
0.25 oz (Knox) Original Gelatine, Unflavored
3 egg yolks
3/4 cup sugar
1 T imitation vanilla extract
1 cup sliced almonds
3 T fleishmanns's original

Recipe Directions for Butter Almond Ice soy

  1. In sauce pan, add egg yolks, beaten, with 1 cup soy milk and 1/2 cup sugar and heat to about 175. When it coats the back of the spoon, remove from heat. In the mean time, whip 1/4 cup sugar, the rest of the soy milk, oil vanilla and package of gelatin. This will change the fat content of the soy milk to something more like whipping cream and the gelatin and sugar will add consistency.

  2. In a pan, melt the margarine and toast the almonds until they are golden. remove from heat.

  3. You will notice that the 'cream' base is thickening, continue whipping with whisk attachment on mixer until the almonds have cooled enough to add to the base. Put in container in the freezer and let freeze. If you don't have an ice cream machine, take the mixture out every hour and whisk it to keep the consistency creamy.
