Recipe Ingredients for Busy Day Tortellini Soup

6 cups chicken broth, reduced sodium
350 g cheese tortellini
1/2 cup sliced scallions
1/2 cup diced carrot
1 T minced basil leaves
1/2 t kosher salt
1/4 t ground black pepper
1 cup chopped spinach
1 cup frozen green peas

Recipe Directions for Busy Day Tortellini Soup

  1. Bring the broth to a simmer. Stir in the tortellini, scallions, carrot, basil, salt and pepper. Simmer, covered, for 7 minutes.

  2. Stir in the remaining ingredients. Cook until the tortellini is tender, about 5 minutes more.
