Beans, rice, red peppers and sweet onion. Serve with quacamole and salsa and season to taste with cayenne pepper.

Recipe Ingredients for Burritos

1 cup basmati rice, cooked
1 cup black beans, cooked or canned (rinsed and drained)
1 red bell pepper
1/2 large sweet onion
1 tbsp oil
1 tsp cumin
1/2 tsp chili powder
16 flour tortillas (6") or 8 (10")

Recipe Directions for Burritos

  1. In oil, saute pepper and onion until crisp tender. Add spices and beans and rice and heat through.

  2. Heat tortillas and put 1/2 cup mix into each. Top with guacamole and salsa and season to taste with cayenne pepper. Roll up, burrito style.
