I really like these, even without cheese or sauce. I've made these with mexican chorizo which is pretty good but I thought about using turkey instead of pork. I can't find turkey chorizo so this is my attempt. The turkey only cuts about 60 calories per serving but with the fresh spices and addition of the red wine really makes this taste great. Makes 10 burritos

Recipe Ingredients for Burritos - Blackbean Burritos, 1.64Kcal/g

1 lb lean ground turkey
1 Onion
1 pepper jalape?o
1 bell pepper
16 oz (1 can) reduced sodium refried black beans
1/2 cup red wine
3 tbsp olive oil
2 tbsp paprika
1 tsp crushed red pepper
1 tsp kosher salt
1 tsp granulated garlic
1 tbsp Coriander Seed
1/8 tsp black pepper
570 g (10 - 8 inch) Whole Grain Tortillas

Recipe Directions for Burritos - Blackbean Burritos, 1.64Kcal/g

  1. Prep:

  2. Combine all the spice in a spice/coffee grinder, and grind till the seeds are no more. Dump the turkey into a mixing bowl, add 1 tbsp of olive oil and the ground spice mix. Mix by hand till combined, wash hands afterward(duh). Set aside.

  3. Dice the onion to a fine dice. Seed, devane and dice the jalapeno and bell pepper.

  4. Procedure:

  5. Heat 2 tbsp of olive oil over medium heat till shimmering in a large stainless steel skillet. Add the turkey. Cook, stirring to break it up. Clean the bowl and once the turkey is done put it back into the bowl. Set aside.

  6. There should be enough oil left in the pan to cook the onions and peppers, if not add another tbsp. frie the onions and peppers till the onions are translucent. Add the red wine. Scrape and deglaze the skillet. Return the turkey and combine.

  7. Add the refried beans, stir till combined. Once combined remove from heat and serve.

  8. I like to heat the tortillas in a microwave for about 10 seconds to make pliable, then once rolled heated on a cast iron flat skillet, browning both sides.
