This is a totally yummy and VERY filling vegan burrito. I make the vegan taco-style "beef" and store it in the fridge in an airtight container to use multiple times. This is really low in sugar and high in protein, fiber, and you even get the calcium without the cheese. Yummy!

Recipe Ingredients for Burrito, Vegan Beef and Bean

4 tortilla, 10-inch flour
1 cup soy crumbles
3/4 cup salsa
1/2 cup chopped onion
3 cloves garlic
1/4 cup chopped cilantro
2 tbsp chopped jalapeno
6 cups spinach, fresh
2 tbsp olive oil
1 cup refried black beans
1 avocado
1/2 tsp salt
1/2 tsp pepper

Recipe Directions for Burrito, Vegan Beef and Bean

  1. In a skillet saute the spinach with half the onion, garlic, and cilantro. Remove sauteed spinach from skillet and set aside. Add the rest of the onions, garlic, cilantro, and the jalapeno to the skilet and saute until they get soft. Add the frozen soy crumbles and cook until they are completely defrosted. Stir in 3 tbsp of salsa and 1 tsp of water and let simmer for 6-8 minutes.

  2. Warm up your beans and your tortilla. Spread beans down the middle of the tortilla, then the soy "beef", the spinach, the avocado, and the remaining tbsp of salsa.

  3. Wrap it up and enjoy!
