Recipe Ingredients for Burnt Honey Icecream

2 serving Paris Creek Full Cream Milk
200 grams Cream, Fluid, Half And Half
60 grams Egg, Yolk

Recipe Directions for Burnt Honey Icecream

  1. Place honey in a pan and caramelise till it smokes.

  2. Add cream and milk and return to the boil.

  3. Whisk in yolks and cook as for an anglaise.

  4. Cool rapidly over ice.

  5. Churn in an ice cream machine as per manufacturer's instructions
