Using your microwave oven to thaw vegetables allows this hearty soup to be prepared and simmered in twenty minutes. It a microwave oven is not available, add frozen vegetables to soup and increase the simmer time by 6 minutes.

Recipe Ingredients for Burgundy Mushroom-Vegetable Soup

10 oz frozen mixed vegetables for stew (potatoes, carrots, onions and celery, 2 1/2 cups)
2 tbsp margarine
3 cups (8 oz) mushrooms, presliced
1 tsp bottled minced garlic
1 tbsp all-purpose flour
14 oz beef broth
1/4 cup dry red wine (burgandy)
1/8 tsp bay leaf
1 tsp dried thyme
1/2 tsp salt
1/4 tsp black pepper, freshly ground

Recipe Directions for Burgundy Mushroom-Vegetable Soup

  1. Place frozen vegetables in a microwave-safe bowl. Microwave in defrost cycle (30% power) for 7-8 minutes

  2. While vegetables are defrosting, heat margarine in a large saucepan over medium-heat heat. Cook mushrooms and garlic in margarine for 3 minutes, stirring occasionally. Add flour and cook for 1 minute, stirring constantly

  3. Add thawed vegetables, broth, wine, bay leaf, thyme, salt and pepper. Bring to a boil over high heat. Reduce heat to low, cover and simmer for 8 minutes, stirring occasionally. Remove and discard bay leaf

  4. Serving Suggestions: Serve with crusty hard rolls
