A lower calorie lasagna. No pasta allowed!

Recipe Ingredients for Buny's Portobello Mushroom Lasagna

1 lb ground turkey
20 oz fresh mushroom, (portobello)
28 oz diced tomatoes
8 oz diced mushrooms
24 oz 1% cottage cheese
2 1/5 oz shredded mozzarella cheese
1/2 cup green pepper
1 cup onion
2 1/2 tbsp grated parmesan
300 g tomato sauce

Recipe Directions for Buny's Portobello Mushroom Lasagna

  1. Cook turkey, diced onion & pepper in dutch oven. Add canned diced tomatoes (drain liquid) and canned (finely diced) mushrooms (also drain liquid). Add any seasoning you wish, I used garlic powder, onion powder, basil, Italian seasoning, parsley and black pepper. (heat it up with a little red pepper flakes as well) Add tomato sauce, I use Hunt's Garlic & Herb spaghetti sauce (only one cup). Add Parmesan cheese to thicken. Simmer. Meanwhile, dump entire container of cottage cheese into bowl, and season with same seasonings used in the meat sauce.

  2. In a 13x9 pan start with a little bit of meat sauce and cover the bottom of the pan. Place the large Portobello Mushrooms over sauce until covered. Add seasoned cottage cheese. Repeat. End with sauce and then cover completely with Mozzarella cheese. Bake in a 350 oven for about 45 minutes.
