These are great on-the-go burritos. There are so many combinations you can make by substituting the cheese, veggies, meat, salsa, etc. Some recipes even have hashbrowns in them. Have fun!

Recipe Ingredients for Bulk Breakfast Burritos

12 turkey sausage links, cooked and broken in pieces
2 T. Olive oil
1 c. Onions, chopped
2 c. bell peppers, chopped
2 c. frozen corn
8 oz. green chilies, canned
12 eggs
12 flour tortillas

Recipe Directions for Bulk Breakfast Burritos

  1. Break up turkey sausages and cook. (The turkey sausage links I use are already cooked and frozen from Costco, so I just reheated them and sliced them up, otherwise you can use 1 lb. bulk sausage of your preference).

  2. Saute bell peppers and onions in olive oil.

  3. While sauteeing the veggies, shred the cheese.

  4. When veggies are soft and onions are translucent, add corn, garlic, and green chilies.

  5. Heat until bubbly.

  6. Add egg substitute and cook until just set, stirring occassionally.

  7. When eggs are cooked, add cheese and stir.

  8. Heat tortillas between a towel or two (depending on size) in the microwave for approximately 30 seconds to 1 minute.

  9. Put 1/2 C. of egg mixture into tortilla, then roll up burrito-style.

  10. Wrap in plastic wrap.

  11. Place in Gallon Freezer bag in the freezer.

  12. To Reheat: Remove from freezer and plastic wrap.

  13. Wrap in paper towel or napkin.

  14. Place in microwave for 1-2 minutes, depending on your microwave.

  15. Enjoy!
