Recipe Ingredients for Bulgur wheat with cottage cheese pine nuts raisins and chickpeas for 4

1/2 cup bulgur wheat
1/2 cup dried chickpeas, soaked
1/2 cup cottage cheese
5 peppers
1/4 cup raisins
2 tbsp pine nuts
1/2 cup chopped mint leaves
2 tbsp olive oil
1 tsp cinnamon
1 tsp cumin
1 tsp chilli powder
1 Salt and pepper to taste

Recipe Directions for Bulgur wheat with cottage cheese pine nuts raisins and chickpeas for 4

  1. Boil bulgur wheat in 1.5 cups water to a rolling boil, then turn off heat and let it sit.

  2. Heat oil in a skillet.

  3. Add chopped peppers, cook for a minute. Then add in pine nuts and raisins and saute for 30 seconds.

  4. Add cumin, chilli powder, cinnamon and salt and stir.

  5. Mix in bulgur wheat, cottage cheese and mint leaves and stir over medium flame for 1 minute.

  6. Pre heat oven to 400 degrees F.

  7. Oil an ovenproof dish and pour contents of skillet in.

  8. Bake for 20-25 minutes and serve hot
