Tangy tabouli salad served on shredded leaf lettuce &/or with toasted whole wheat pitas.

Recipe Ingredients for Bulgur Tabouli

1 cup bulgur wheat
1 1/2 cup boiling water
1 1/2 tsp salt
1/4 cup lemon juice
1 tsp lemon rind
2 tbs olive oil
1 dash garlic powder
2 tomatoes, diced
3 cup fresh chopped parsley
2 green onion, chopped with tops
1 cucumber, chopped
1 tbs chopped mint

Recipe Directions for Bulgur Tabouli

Pour boiling water over bulgur and salt, stir, cover and let sit for 30 min. Stir in lemon juice, rind, olive oil, and garlic powder, and chill for 2-3 hours. Add tomotoes, parsley, cucumber, green onions and mint. Gently toss and serve.
