Recipe Ingredients for Bulgur Risotto With Corn and Shrimp

160 grams Bulgur (ALA) from Hard Red Wheat
2 tbsp Extra Virgin Olive Oil
1 tbsp Minced Garlic
0.5 tsp Kosher Salt
16 oz Frozen Shrimp: Recipe Ready, Cooked, Cleaned, Tail off, Medium
12 oz Corn, Sweet, Yellow
1 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Red
5 Teaspoon Juice
1/4 tsp Crushed Red Pepper
2 oz Cilantro

Recipe Directions for Bulgur Risotto With Corn and Shrimp

  1. Heat oil in large pan, over medium heat.

  2. Cook garlic in oil for 30 seconds;stir in bulgur and salt and stir another minute.

  3. Gradually stir in 2 cups boiling water, 1/2 cup at a time (waiting until bulgur absorbs it to add more), until bulgur is slightly soupy, 8-10 min.

  4. Add shrimp, corn, bell pepper, lime juice and red pepper flakes and continue to stir 2-3 min.

  5. Add cilantro and serve.
