my take on a middle eastern side dish

Recipe Ingredients for Bulgur Pilaf

1 cup bulgur wheat
3 tbsp smart balance omega 3 butter
1 green onion
1/4 cup yellow onion
2 garlic cloves
2 baby carrots
1/2 cup mushrooms, chopped
2 cups water
1 serving chicken boullion
1/4 tbsp sea salt
1/4 tbs black pepper
1 jalapeno pepper

Recipe Directions for Bulgur Pilaf

  1. In a large skillet, sautee yellow onion in melted butter for 2 minutes

  2. Add bulgur and keep sauteeing for another 2 minutes

  3. Add all chopped veggies

  4. In a seperate saucepan, add boullioun cube to boiling water

  5. Slowly stir in boiling broth to bulgur mix

  6. Bring to a boil. Reduce heat and simmer on VERY low for 15-20 minutes, stirring often
