Bulgur pilaf with pine nuts, mushrooms, parsley, green onions

Recipe Ingredients for Bulgur Pilaf

1 tablespoon olive oil
2 cups bulgur
1 cup green onions
1 lb mushrooms
1/4 teaspoon salt
29 ounces vegetable broth
4 tablespoons pine nuts
1 cup parsley

Recipe Directions for Bulgur Pilaf

Heat oil in large skillet (with cover), add in bulgur, onions, mushrooms, salt, saute over medium heat for about 5 minutes. Add in broth and salt. Bring to boil, then cover and reduce heat. Allow to simmer about 20 minutes. Remove from heat, still covered, let stand 5-10 more minutes. Remove cover and fluff, add pine nuts and parsley.
