Recipe Ingredients for Bulgur Pilaf with Broccoli and Peppers

1 cup Bulgur
1 medium (2-1/2" dia) Onions
1 medium Green Bell Pepper
1 cup Black Beans
1 cup Petite Cut Diced Tomatoes
1/2 cup, chopped Broccoli, Cooked
0.5 tbsp Olive Oil

Recipe Directions for Bulgur Pilaf with Broccoli and Peppers

  1. 1. Bring a large pan of salted water to a boil over high heat.

  2. 2. Cook the broccoli in pan just until crisp tender but still green, about 2 minutes.

  3. 3. Drain the broccoli , rinse under cold water and set aside.

  4. 4. In same pan heat olive oil and add onion, pepper and garlic and oregano if you like them.

  5. 5. Cook over medium heat until translucent, about 5 minutes.

  6. 6. Add tomatoes, bulgur, 3/4 Cup water and salt and pepper to taste.

  7. 7. Bring to a boil then reduce heat to low and cook until all liquid is absorbed. This will take 10 to 15 minutes.

  8. 8. Add black beans and broccoli florets.

  9. 9. Cover and cook until bulgur is tender, about 10 or 15 minutes.
