What I needed to use up - bulgur wheat, lentils, tomatoes, and purple cabbage + little olive oil and a garlic-spice mix. I eat with little ketchup for added flavor :)

Recipe Ingredients for Bulgur and Lentils

1/2 cup dry bulgur wheat
1/2 cup dry lentils
1 1/2 cup chopped tomato
1 cup chopped red cabbage
1/2 tablespoon olive oil

Recipe Directions for Bulgur and Lentils

Cook bulgur and lentils separately according to package directions. Add everything together at the end, heat together so melds for a few minutes. Would add more variety of veggies and spices if I had them :) maybe eat with some chicken or on its own as a veggie/vegan meal
