A little wierd but filling and an interesting combination of flavours.

Recipe Ingredients for Bulgar wheat and stone fruit salad

1 1/2 cups Bulgar Wheat
3 cups water
1/2 tsp salt
3 peaches, diced
3 apricots, diced
2 tbsp mint, chopped
1 cup cucumber, diced
1/2 onion, diced
1 tbsp olive oil
1 tbsp apple cider vinegar
1 tbsp balsamic vinegar
1/2 tsp cracked black pepper

Recipe Directions for Bulgar wheat and stone fruit salad

  1. Bring the bulgar wheat, water and salt to a boil, lower the heat and boil 15 minutes or until you can't see the water any more.

  2. Meanwhile, chop the rest of the ingredients and put into a large salad bowl.

  3. When the bulgar wheat is done, let it cool until you can just stick a finger into it and then stir the oil and vinegar in.

  4. Mix with the rest of the ingredients and serve. If you can chill it in the fridge an hour or so first, even better.
