Meatballs made with turkey, bulgar and wheat bread.

Recipe Ingredients for Bulgar Meatballs

1/2 c bulgur
1 T olive oil
2 c bread, whole wheat
1 large egg
1 large egg white
1 pound ground turkey
1/2 c. parmesan cheese
1/2 t. cinnamon
1/2 t. pepper
1/2 t. salt

Recipe Directions for Bulgar Meatballs

  1. Place bulgur in a medium bowl and cover generously with hot water. Let soak for 30 minutes. Drain in a fine sieve, pressing to remove excess liquid.

  2. Place bread, cubed, in a bowl and cover with cold water. let soak for a few minutes. Drain and squeeze out moisture.

  3. Whisk egg and white. Add bulgar, bread, turkey, Parmesan, cinnamon, pepper and salt. Mix with hands. Form 20 oval meatballs.

  4. Heat oil in pan. Add half the meatballs and cook until brown. Drain on paper towels.
