Izzi's nice vegetarian chili. Requires a can of black and red kidney beans, but didn't put it in the ingredient list because its calculations were wrong.

Recipe Ingredients for Bulgar Chili (w/o Beans)

1 tbsp olive oil
1 cup carrot, chopped
1 cup green pepper, chopped
1 cup onion, chopped
1/2 cup garlic
1/2 cup bulgur
14 1/2 oz diced tomatoes
8 oz tomato paste
3 tsp chili powder
2 tsp cumin

Recipe Directions for Bulgar Chili (w/o Beans)

  1. saute carrot, pepper, onion, & garlic 4 mins

  2. stir in the remaining ingred's. Bring to a boil. Reduce heat, cover and simmer 40-45 min's or until bulgar and veggies are tender.

  3. Stir frequently.
