An Ottoman Delicasy from Central Asia. As a light lunch or as a side dish for meat dishes.

Recipe Ingredients for Bukhara Rice Pilav from Olga's Healthy Choice

1 cup whole grain rice
3 cups water
1 tbsp olive oil
1 cup onion
1/2 cup peas
1/2 cup carrots
1 tbsp dried grapes
1 tsp pine nuts
1 pinch cumin
1 pinch cinnamon
1 pinch clove powder
1 pinch saffron

Recipe Directions for Bukhara Rice Pilav from Olga's Healthy Choice

  1. In a pan pure oil, add sliced onions. Fry them till they get golden yellow, on meadium heat. Then add nuts, and spices. After frying all about a minute, add rice and peas. Fry two more minutes. Add water and brong to boil. Lower the heat and let the rice cooks for about 20-25 minutes. Then add grinded carrots. Turn the heat off till rice is cooked properly. Cover the pan with some paper towels and let it rest for 10-15 minutes.

  2. PS: It is advised for a better taste that some pieces of butter can be added while it is resting. But the calorie value should be added to the recipie, then.
