I modified several Jambalaya Recipes to come up with one that was tasty and reasonably low in fat. This formula resulted in a serving size of about 12.5 ounces. The fat is relatively low at 8 grams and the fiber is high at 10.5. By my calculation the Weight Watcher Point count is 13 points.

Recipe Ingredients for Buick Bobs Jambalaya

1 cup bell pepper, chopped
6 cup brown rice (cooked)
4 tsp cajun seasoning
16 oz canned black beans, drained
1 cup celery (diced)
1 1/2 lbs chicken breast, cubed
2 cup chicken broth
4 tsp crushed red pepper
3 cloves garlic
1/2 lbs ground turkey (Italian sausage type)
1 cup onion (diced)
32 oz tomatoes (diced)

Recipe Directions for Buick Bobs Jambalaya

  1. Cook rice per package directions.

  2. In large skillet or pot, cook sausage and drain.

  3. Cook chicken, when done, remove from pot and set aside with sausage.

  4. Sauté celery, onion, and garlic, stirring constantly.

  5. Add chicken and sausage back into pot.

  6. Add chicken broth, seasonings, canned tomatoes and beans.

  7. Bring to a boil

  8. Reduce heat and simmer for about 10-15 minutes, stirring occasionally.

  9. Serve over a scoop of rice.
