1 1/4 cups date sugar
3/4 cup brown rice syrup
2 tbsp canola oil
1 1/4 cups applesauce, unsweetened
4 egg whites
1 tbsp lemon extract
3 cups oats
2 cups bran
1/4 cup flax seed, ground
2 cups flour
1 1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1/4 cup poppy seeds

Recipe Directions for buggyhair's lemon poppy seed breakfast cookie

  1. Preheat oven to 350 F.

  2. Line baking sheets with parchment paper.

  3. Combine sugar, syrup, oil, egg whites, lemon and applesauce in a bowl.

  4. Add oats, bran, flour, flax seed, baking soda, baking powder and salt.

  5. Stir in poppy seeds.

  6. Drop 1/2 cup at a time onto prepared baking sheets.

  7. Bake for 20 minutes or until lightly golden.
