Diana Reese brought these to a Prism meeting and they are delicious. She used 2 pounds of chicken breast.

Recipe Ingredients for Buffalo Wings

1 pound chicken breast
1/4 t. ground red pepper
1 Salt and Pepper
3 T. cayenne pepper sauce
1 T. water
1 T. melted butter
1/3 cup reduced fat sour cream
1/4 c. crumbled blue cheese
2 T. light mayonnaise
2 T fat free milk
1/4 teaspoon Worcestershire sauce

Recipe Directions for Buffalo Wings

  1. Cut chicken breast into wing sized pieces.

  2. Place oven rack 6 inches from broiler.

  3. Spray a jelly-roll pan with nonstick cooking spray.

  4. Toss chicken with ground red pepper and 1/4 t. of salt.

  5. Place on prepared pan and broil 3 minutes.

  6. Meanwhile, in small microwave-safe bowl, microwave cayenne pepper sauce, water and butter on high for 10 seconds.

  7. Add to chicken in pan and stir to coat.

  8. Broil 2 minutes longer or until chicken is no longer pink in center.

  9. While chicken is cooking, prepare blue cheese dip: In small bown combine sour cream, blue cheese, mayonnaise, milk and Worcestershire sauce.

  10. Serve chicken with carrot and celery sticks and blue cheese dip.
